Ingredients:
2 tsbp Chia Seeds
100g Stoned Dates (chopped roughly)
25g Organic Coconut Oil
2 tsbp Chia Seeds

50g Sultanas
50g Walnuts (finely chopped)
50g Dried Apricot
40g Pumpkin Seeds
1 tbsp Organic Milled Flaxseed
200g Oats
How To:
- Preheat oven to 160 degrees/gas mark 3
- Spread your baking paper across a large baking tray
- Soak chia seeds in a small bowl with 120ml of cold water. Leave for 5mins to swell and thicken.
- Place all your chopped dates and organic coconut oil in a medium pan with 2 tbsp of water on a low heat. Stir for a few minutes until organic coconut oil as melted and mixture becomes a paste.
- Remove from the heat and blend with 100ml of cold water.
- Add the remaining ingredient’s to the pan with the soaked chia seeds. Then you need to mix together.
- This is where the magic happens! You need to compress your power bars into your baking tray and ensure your mixture is compacted firmly.
- Bake for 25-30minutes, until dark brown.
- Allow your chia seed power bars to cool for 10 minutes. Cut your recipe into 10 bars. Enjoy!
