Ingredients:
500g Lean Minced Beef
400g Tin of Chopped Tomatoes
400g Tin of Red Kidney Beans, drained and rinsed
2 Medium Onions, Chopped
2 Peppers, Chopped
2 Garlic Cloves, finely chopped
300ml Beef Stock, made with 1 Beef Stock Cube
90g Spinach
1 tsp hot chili powder
1 tsp Paprika
2 tsp ground coriander
2 tsp ground cumin
2 tsp Tomato Puree
How To:
- Place a large non-stick saucepan on medium heat; then brown off your beef and add your onions for 5 minutes. (make sure you break for lean minced beef into smaller pieces.)
- Add the garlic, 1 or 2 tsp of hot chilli powder depending on how tough you are when it comes to heat. Also add your cumin, paprika and coriander to your chilli for a further 1-2 minutes.
- Let the magic happen and add your 300ml of beef stock, tin of chopped tomatoes, kidney beans, tomato purée and peppers with a dab of freshly ground black pepper! Your going to gently bring this lean mean beef chilli to life and gently simmer in the saucepan with lid placed loosely for 45 minutes.
- Serve and enjoy with spinach on the side!
Serves 5 people and approx 300 calories per serving!
*Highly recommend enjoying this with cauliflower rice as oppose to brown rice for a low-carb delicious meal.
