Ingredients:
1/2 Sweet Potato
1/2 Maris Piper Potato (Baked Potato)
1 cup of Broccoli
1 cup of Kale
4 Spring Onion
1 cup of Spinach
How To:
- Bring your water to the boil then add 1/2 sweet potato and 1/2 maris piper for 22mins
- Begin to dice your Broccoli into smaller chunks including the stalks and this adds delicious crunch to your colcannon.
- After 15mins of boiling your potatoes bring this down to the simmer and add your broccoli and kale for the final 7mins.
- Drain off excess water from the saucepan. Then mash all your potatoes and vegetables together and garnish with spinach and spring onion to finish.
